Alec’s Ice Cream Made Us Read the Label

“Better dairy. Nothing sneaky.”

That promise made us look twice at the freezer aisle.

Alec’s Ice Cream uses A2/A2 milk, thoughtfully sourced sugar, recognizable ingredients, and prebiotic fiber. Its Culture Cups also contain more than a billion BB-12 probiotics.

What’s in Alec’s Ice Cream?

Alec’s current lineup includes A2/A2 dairy and prebiotic fiber. Probiotics are specific to the Culture Cups, not every pint. Product information

For example, the Madagascar Vanilla Bean Culture Cup contains skim milk, cream, organic raw cane sugar, egg yolks, vanilla, cassava root fiber, acacia fiber, citrus fiber, and BB-12 probiotic culture. Its chocolate shell includes coconut oil, cocoa, and powdered sugar. Full ingredients

It’s still a dessert with sugar, fat, and functional ingredients. Unfamiliar ingredients aren’t automatically harmful; emulsifiers help create the right texture, and egg yolks naturally contain lecithin. Formulation reference

Alec’s is also transitioning its formulas. Some products may still contain seed oils, natural flavors, or gums, so check the package rather than relying only on the website. Company notice

What is A2 dairy?

A2 refers to a type of beta-casein, a milk protein. A2/A2 cows produce milk without A1 beta-casein. University of Minnesota Extension

Some studies suggest A2 milk may cause less digestive discomfort for certain people, but that doesn’t mean everyone needs it, or that ice cream produces the same effects as milk. Research overview

A2 milk still contains lactose and isn’t suitable for people with cow’s milk protein allergies. If lactose is the issue, A2 alone won’t solve it.

Does A2 dairy cost more?

It often commands a premium. Identifying suitable cows, managing breeding, and maintaining a separate milk supply add requirements beyond ordinary milk production. The premium varies by supplier and market; there isn’t one fixed A2 surcharge. Penn State Extension, University of Missouri dairy industry study

Alec’s offers a revealing example. The company says limited supplies and rising costs of certified organic A2 dairy contributed to its decision to move away from certified-organic dairy sourcing while retaining A2 milk and selected organic ingredients. Organic and A2 describe different attributes. Alec’s explanation

That makes the story more interesting than “good ingredients, nothing else.” There are real sourcing decisions behind getting a product into more freezers at a workable price.

Alec’s has given us a reason to look more closely at ice cream. The ingredients and dairy sourcing are interesting. The probiotic promise deserves measured expectations.

And the scoop still has to taste good enough that we want another one.
